Cruciferous Veggies Are Good For You!

Cruciferous veggies are those like cauliflower, broccoli, and kale. Anything with curly features. They’re packed with nutrients and minerals, check out what WebMD has to say.. They can also be delicious! I took the cauliflower plunge and made roasted cauliflower enchiladas based on my previous enchilada recipe. YUM. Even picky eaters (*cough* Mr. London *cough*) will like them!

Roasted Cauliflower Enchiladas
Ingredients: serves 2 ish
1/2 head cauliflower, florets only
1 tsp turmeric
1/2 tsp garlic powder
Drizzle olive oil
Salt/pepper to taste
4 king size corn tortillas, or regular flour/rice flour tortillas
1 can chopped green chilis
1-2 cups (or more) roasted red pepper soup
1/2-1 cup plain Greek yogurt
Lime wedge and zest

Preparation: pre-heat oven to 400F
1) remove florets from stems and leaves, toss in a bowl with spices and olive oil, spread on a baking sheet
2) place the baking sheet in oven and roast for 30 minutes, tossing the cauliflower half way through
3) while cauliflower roasts, prep the rest
4) mix yogurt with juice and zest from the lime wedge
5) fill tortillas with yogurt sauce and green chilis
6) pour a layer of soup at bottom of baking dish
7) when cauliflowe is done, add to tortillas, roll up the enchiladas, place in baking dish
8) top with soup and any left over yogurt sauce and chilis
8) reduce oven to 325 and bake for 20 minutes
