Best Carrots Ever

Hi friends. The other morning I took a trip to the farmer’s market with Ash and our friend Elizabeth. It was delightful, though all I came home with was fresh sunflowers

and a bunch of carrots. “Why?” you ask? Well it may have been the unplanned nature of the trip or leftover effects of the Wine Friday I had the night before…. Either way the carrots were delicious and here is what I did with them! Perfect for fall holidays đŸ™‚

Honey Mint Carrots
Ingredients:
1 bunch carrots, peeled and cut into 2-3 inch pieces
1-2 tsp fresh mint, diced (from my garden! The only thing surviving…)
Little less than a Tablespoon each of butter (I use Earth Balance, less cholesterol and it’s vegan) and honey
Dashes of cinnamon, thyme, and paprika
Optional: slivered almonds, raw or fresh toasted

Prep:
1) steam carrots for 5 minutes or so
2) over low heat melt butter and honey together, add spices, add mint, stir to combine
3) pour delicious mixture over carrots and top with almonds if desired
4) smile and enjoy!
