Fried Rice: quick and easy

Holy over-booked schedule, Batman!! Have I even eaten in the past two weeks? I have no idea. Between work, disliking work, liking work, thinking about moving, taking yoga, teaching yoga, preparing for the departure of a dear friend, then going to Santa Monica for Tadasana Festival with yogis and staying with some of my best and oldest friends, I seriously couldn’t get into the kitchen!! But now I’m a little bit back on track. And by that I mean I made fried rice – a quick and dirty repository for any leftovers hiding in your fridge. Seriously.

Quick Fried Rice
Ingredients:
Cooked leftover rice – about 1-1.5 cups
1/2 onion sliced
1 large garlic clove diced
1/2-3/4 cup frozen peas, fresh if you got them
1-2 eggs
Coconut oil
2 tablespoons Trader Joe’s Island or regular Soyaki (I know soy is less than awesome, so use what you prefer!)

Prep:
1) heat oil in a pan while you chop the onion, add onion to the pan over low-medium
2) dice garlic, add to pan when onions begin to become translucent or caramelized whichever you prefer
3) wait a few till you smell garlic then add the peas, cook till hot
4) push veggies over and scramble the egg on the side then mix in
5) add rice, heat through, add Soyaki
6) eat

Replace veggies, add veggies or really anything you want! It’s a catch-all 🙂
