Variations on a theme

Oh heeeeeey! As you may have noticed, I use the TJ’s roasted red pepper and tomato soup a lot. Here’s another recipe similar to my other baked burritos, except with quinoa!

Quinoa and Caramelized Onion Enchiladas
Half carton TJ’s roasted red pepper and tomato soup
2 cans chopped green chiles
6 large tortillas
1 cup quinoa (use veggie stock to prepare)
1 large onion
Olive oil
Spices: pepper, cumin, thyme, paprika
Optional: cheese of choice

Prep: serves 6
1) slice onions while oil heats on low. Add the onions and cook low and slow until caramel colored
2) prepare quinoa according to box using veggie stock instead of water.
3) add one can green chiles to onions, then add quinoa and spices
4) heat soup and other can of green chiles in the quinoa pot
5) build burritos using the tortillas, cheese (optional), and quinoa mixture
6) place in casserole dish, top with soup/sauce
7) bake at 350 for 12 ish minutes

Seriously so easy and REALLY good. Smash totally approved, we even had them as leftovers. We also enjoyed a refreshing light cerveza or two šŸ˜‰
