buffalo quinoa bites

Another quinoa bite recipe?!? Yes. Because BUFFALO SAUCE. I just love that spicy, tangy, buffalo-y goodness in my mouth sans the requisite chicken wing/tender or chicken-esque substitute. Enter So Very Blessed Buffalo Chicken Quinoa Bites. What a fabulous idea – basically a quinoa patty with BUFFALO (and chicken but we’ll let that slide). So I was bound and determined to make my own by omitting the chicken and adding some veggies! I’m also in love with my food processor: warning! Do not try to shred red bell pepper, it turns to liquid. So if you want to use your food processor I’ll note what to use the regular blade for vs the shredder function – or just dice by hand 🙂

Buffalo Quinoa Bites
Ingredients:
1 cup quinoa (2 cups stock to cook)
1 medium onion diced (by hand or regular processor blade)
1 red bell pepper diced (by hand or regular food processor blade)
2 cloves garlic minced (by hand or throw in the processor)
1-2 yellow straight neck squash (or crookneck or zucchini) shredded (yay food processor shredding blade!)
1 -2 cups low fat mozzarella (more/less to taste/desire)
1 egg
Buffalo sauce to taste (I used about half a bottle of Frank’s Red Hot Wings Buffalo – did I mention I LOVE buffalo sauce? And Nate added more to his after they were done…)
Salt and pepper
~1.5 teaspoon Poultry seasoning
3-4 handfuls breadcrumbs to even out texture
Option: I added 2-3 tablespoons hemp protein/fiber powder. Can’t even taste it – boo yah.

Preparation: preheat oven to 350-375
1) cook quinoa
2) dice by method of choice the onion, bell pepper, and garlic – if using food processor definitely do this blade first then the shredder so you don’t shred then dice your squash
3) shred squash
4) combine all ingredients except egg in a bowl – taste and adjust seasoning and spices
5) add egg and combine
6) using an ice cream scoop, spoon, or your hand, create whatever sized bite or patty (yes! Use it as a burger replacement!), onto a foiled and oiled baking sheet
7) bake for 25-35 minutes till done

Serve with ranch or blue cheese, celery, and avocado with a sprinkle of fresh cracked pepper. Oh, and a beer is definitely necessary as your mouth will be dancing with these BUFFALO bites!!
